The gravel should be fine, it may appear a little "cleaner" should you get overspray on the gravel, but in a few weeks it will all blend in again.
The pavers are another issue,
If the pavers have a sealer on them, then the sealer will be removed by the stripper.
Depending on the coating on the pavers then the pavers may have an enhanced color to them from the pavers,
o we would recommend that you tarp off the pavers nearby when stripping and keep a lot of water sprayed on the tarp while the stripper is doing its job
