The sealer can be used on the grout,
it is the last step after getting the surface to the shine you are looking for.
Don't apply the sear until you are happy with the results.
Once applied, you can re-polish the surface again in the future, this will generally remove any sealer when accomplished.
Then you can re-seal again when finished
